Parmesan Roasted Kohlrabi

This recipe was adapted from one I found on Allrecipes.com. I have not tried it yet, but it looks delicious!

4 kohlrabi bulbs, peeled
1 Tbs. olive oil
1 clove garlic, minced
Salt and pepper to taste
1/3 cup grated Parmesan cheese

Preheat oven to 450 °F. Coat baking sheet with cooking spray or line with foil or parchment paper. Cut kohlrabi into ¼”-thick slices, then cut each slice in half crosswise. In large bowl, combine olive oil, garlic, salt and pepper. Add kohlrabi slices and toss to coat. Spread kohlrabi in single layer on baking sheet.

Bake, stirring occasionally, until softened and just starting to brown, 10-20 minutes, Timing will depend on thickness of kohlrabi. Remove from oven and sprinkle with Parmesan. Return to oven; roast until Parmesan is lightly browned, 3-5 minutes. Serves 4.
